Upon arriving at a UK bottler, the following is allowed to be adjusted in wine:

Sparging, add SO2, add copper, sterile filter, blend multiple tanks of same wine.

What is NOT allowed:
Adjusting acid, sugar, tannin, color, blending different things. Essentially, NO WINEMAKING.
