Production Process Vin Jaune
After fermentation wine is storred in old barrels in aerated environment with natural temperature swings. Not allowed to be topped up or moved for 60 months. Veil develops, which protects wine from air and gives it special sherry notes - controlled oxidation. Release after 6 years and 3 months after vintage (7 years after harvest)
