What is the Nihonshu-do?
Scale used to determine sweetness of sake — higher the specific gravity, higher the glucose levels.
Under 0 is wet
Above 5 extremely dry
3-5 Mod sweet
What is the Shin Amakara-do?
A newer system that measures the glucose against the acidity in a sake and can more accurately determine a sake’s perceived sweetness and dry taste.
Below 1.9 is sweet
1.1 to 1.8 mos sweet
0.3 - 1.0 mod dry
Dry below 0.2
Notan-do
The notan-do measures the output from the nihonshu-do against the total acidity in a sake to produce an index or richneee or lightness
Rich above -0.91
Light below -1.07
Hyogo and Ishikawa both have dry but rich sakes, why?
Both are known for harder waters.
Ishikawa- Yamahai is good given water
