The leaf became flaccid after boiling due to the cell membranes rupturing.

The purpose of the ethanol was to remove the chlorophyll from the leaf which prevents the green pigment from masking the iodine test for starch

Because the iodine remained brown the leaf tested negative for starch, it would’ve changed to blue-black if starch was present
