A

Often they dry th egrapes by sun on Esparto Grass Mats in clear plastic tunels until they reach semi-raisin state.
This proces name is Soleo
It takes around 2-3 weeks

Flor forms veil ( Velo de FLor ) it prevents air from getting to wine and oxidise it. Flor lives on nutrients and alc. and gives caracteristic smell and flavour to the wine
