tovan is literally CERAMIC SKILLET. one of the traditional style japanese cookware which can work as skillet or shallow pot.
main ingredients are added when the toban is hot and afterwards soy sauce, yuzu and a flush of sake are added. once toban is covered the cooking process begins with the heat of the toban itself.
