A

Ales are fermented with top-fermenting yeasts at higher temps. Lagers are fermented with bottom-fermenting yeasts at lower temperatures

What makes lambics different to ales and lagers?

A
  • Fermented in open top containers with wild yeasts.
  • Often aged prior to release up to three years
  • Often blended with younger lambics causing second fermentation in bottle
  • Fruit lambics can be refermented with added fruits like strawberries or morello cherries
