grilled florida lobster

A

a fresh grilled , 2-3lb florida lobster. split in half , grilled in our josper oven. served with preserved lemon aioli and a crunchy carrot/fennel/ radish salad. the lobster comes with an extra plate option to french at the table and discard the shell.

one whole 3lb average yellowtail snapper served as boneless chunks. fried in a seasoned, light batter served on the fish carcass. served with a side of peruvian ají verde sauce made with shishito peppers and pickled baby carrots

salt baked fish

A

local market fish. 3 person minimum. usually for 4-5 ppl ; +5 we can do 2 smaller fish if available. we stuff them with lemon, garlic, and fresh herbs. covered with a salt mixture completely , baked for 50-60 min until cooked through.

whole roasted suckling pig

A

imported from spain. 100 percent ibérico milk fed piglets. when preordered 24 hrs in advance , it takes 30-40 min to come out once guests arrive. serves 4-6 ppl. pigs are anywhere from 12-14 lb.

seared faroe island salmon

A

7 ounce, seared crispy skin faroe island salmon filet. cooked medium unless specified. served over a hot, farmed yellow tomato coulis, cooked farro grain and sautéed patty pan squash that are tossed in a basil, olive oil and cumin seed emulsion called mojo verde.

filet mignon milanese

A

8oz prime filet mignon pounded thin then dipped in egg wash and breaded with chefs panko bread crumb seasoned mix. (parmesan cheese, mediterranean spices and herbs.) cut in slices after coming out of the fryer and served with a salad on top. (baby arugula, frisse lettuce, cherry tomatoes, red onions, watermelon radish, parmesan cheese and citrus vinaigrette.)

grilled american wagyu burger from wagyu-x texas. served in a pan de crystal bun which is a high hydration dough bun that is super light and crispy on the outside. with gruyère cheese, red wine onion marmalade, lettuce and tomatoes. served with french fries.

dover sole

A

from the north sea of the UK. considered the best of all soles because of its flavor and texture. we leave the fish whole and take the skin off. we dust it with flour and sautee the whole fish with olive oil, butter, white wine and herbs. finish in the oven and serve it whole on a board to be carved table side. side of black truffle and mushroom risotto and a side of barigoule sauce with capers, lemons and brown butter.
