5 pieces , classic bechamel based croquettes. Made with manchego cheese and 5 jotas iberian pata negra ham. The croquettes are round each weighing 1/2 an ounce. Breaded with egg wash, flour and panko bread crumbs. Served with a black cherry sauce.

Mediterreanean octopus (5-6 oz portion) slow cooked in a salt water solution. then its chilled and marinated with fresh herbs and extra virgin olive oil. (cilantro/parsley), cooked on the grill until crisp served with a piece of lemon, on a plancha, garnished with cracked coriander seeds and cilantro.

Pata negra is breed of pig that originate in the western region of spain that is pasteuer raised eating acorns .It is considered the top ham in the world. the ham is cured and dried. the process can take up to 5 years. We slice it to order and Serve 1-1/2 oz with french cornichons and french baguette.

The filling is made with ground wagyu, shishito peppers, soy sauce, scallions, mirin, garlic. wrapped in wonton skins, pan seared and degalzed with our yakitori sauce which is made from equal parts mirin, soy and sake with lemon orange and lime. the dumplings are served over an edamame puree and finished with dried bonito flakes
